Apple Rabdi – Evaporated Milk Apple Dessert

Ingredients (used american measuring cup, 1 cup = 250 ml)
  • 2 medium sized apples grated with skin Or without skin
  • 500 ml Or ½ ltr milk (please don't use low fat Or skimmed milk)
  • 4 tbsp grated jaggery Or sugar ( use as per sweetness required
  • 1 tbsp vanilla powder Or 1 t/s cinnamon-cardamom powder
  • 6 to 7 raisins (optional)
  • 8 to 10 almonds crushed (optional)
  • 8 to 10 cashews crushed (optional)
  • 4 tbsp grated mawa (optional) - I have used mawa
  • a pinch of salt
How to make the recipe?
  1. Take milk in a wide Or broad bottomed pan. Place on low heat if using sugar add now in the milk. Stir continuously until milk is reduced to half.
  2. Add grated mawa and jaggery if using them now. Keep stirring the mixture. Also add the crushed nuts and salt.
  3. The mixture will start getting thicker. It's time to add the grated apples to the milk. Add vanilla powder Or cinnamon-cardamom powder and raisins. Give one boil and remove from gas.
  4. Allow to cool and keep aside. Garnish with pistachios Or cashews. Serve hot Or chilled.

Ingredients

  • 4 eggs
  • 2/3 cup milk
  • 2 teaspoons of cinnamon
  • 8 thick slices of 2-day-old bread (better if slightly stale)
  • Butter (can sub vegetable oil)
  • Maple syrup
Optional
  • 2 teaspoons freshly grated orange zest
  • 1/4 cup Triple Sec
  • Fresh berries

Method

1 In a medium bowl, whisk together the eggs, milk, and cinnamon. Stir in the orange zest and/or Triple Sec if using. Whisk the mixture until well blended and pour into a shallow bowl, wide enough to place a slice of the bread you will be using.
2 Melt some butter in a large skillet over medium high heat. Place each slice of bread into the milk egg mixture, allowing the bread to soak in some of it. Shake off the excess, and place the bread slices onto the hot skillet.

Lauki Curry with coconut milk

soothing and cooling bottle guard curry with coconut milk and yogurt.
ingredients (measuring cup used, 1 cup = 250 ml):
  • 11/2 or 2 cups chopped bottle gourd/lauki/ghia
  • 1 cup thick coconut milk
  • ½ cup yogurt or any vegan yogurt
  • 2 to 21/2 cups water
  • 1 sprig curry leaves
  • 1 green chili, chopped
  • salt as required
  • tempering
  • 1 or 2 tbsp oil
  • 1 tsp mustard
  • 1 tsp cumin
how to make the recipe:
  1. rinse and peel the lauki and cut into small bite size pieces.
  2. add the lauki pieces, salt, yogurt , curry leaves, green chilies and water in a pan.
  3. stir and cook for 12-15 minutes till the lauki is cooked without a lid.
  4. add the coconut milk and simmer for a minute. don't cook much as the coconut milk would otherwise curdle.
  5. heat oil in a small pan. add the mustard seeds and allow them to crackle.
  6. add the cumin and fry for some seconds.
  7. pour this tempering along with the oil on the lauki curry.
  8. stir and serve the lauki curry hot with steamed rice.
